Recipe: Chocolate Mousse Cake

Chocolate Mousse Cake

Chocolate lovers -- it's time to rejoice, for January 27th is National Chocolate Cake Day. To celebrate, we thought that we'd share the recipe for one of our most popular desserts -- the Chocolate Mousse Cake. If baking a cake is not in your near future, just stop by one of our locations -- either Saquella Cafe in Boca or Prosecco Cafe in Palm Beach Gardens -- and order an individual sized portion of this decadent treat.

Yield: Makes two 8” round cake layers.

Ingredients

Cake:

2.5 oz. butter, melted
14 oz. brown sugar
½ tsp. salt
4 eggs
10 oz. flour
½ oz. baking soda
4 oz. cocoa
12 oz. milk

Ganache (for layers and to pour over cake):

½ quart heavy cream
1 pound semi -sweet chocolate chips
Cake Wash (for brushing layers):
4 oz. simple syrup

Chocolate Mousse (for layers decoration):

8 oz. of previously prepared ganache
8 oz. heavy cream

Preparation

For ganache: Make ahead
Scald the cream and pour over chips. Wait for a few minutes, then whisk. Chill ½ of the ganache, and leave the other ½ out.

For cake:

1)  Preheat oven to 350 degrees.
2)  Spray two 8” cake pans with baking spray.
3)  Whisk together butter, brown sugar, and salt.
4)  Add eggs, and whisk in.
5)  Sift together the flour, cocoa, and baking soda, and add alternately with milk, beginning and ending with flour.
6)  Divide batter between prepared pans and bake for 35-40 minutes.
7)  Let cool.
8)  Once cool, brush the cake layers with simple syrup.

For chocolate mousse:

1)  Whip the chilled ganache and heavy cream together into soft peaks.
2)  Fill the cake layers with mousse.
3)  Pour the remaining gananche (room temp or warmed) over the cake layers.
4)  Decorate the cake with remaining mousse if desired.
